Mama’s Power Balls
As a mama of young kids, I value snacks that are healthy, can be made in larger quantities to last more than one snack, and are delicious. These are one of our favorite snacks! They are loaded with nutrient rich ingredients, easy to make, and are a great snack on the go.
You can make your own variations to this recipe based on what your family prefers, but our favorite is good old chocolate chips.
MAMA’S POWER BALLS
Ingredients
1 3/4 cups Old Fashioned Oats
1/2 cup Sugar Free Chocolate Chips (my favorite is Bake Believe Dark Chocolate Chips)
2/3 cup Unsweetened Coconut Flakes
1/3 cup Flax Seed
1/2 cup Natural Peanut Butter
1/2 cup Honey
1 tsp Vanilla
1 Tbsp Chia Seeds
1/4 tsp Salt
Directions
Mix all ingredients together in a bowl until fully combined. Using a medium size cookie scoop, or your hands, to make balls and place them on a cookie sheet covered with wax paper. Place in the freezer for 15 minutes, or in the fridge for longer, until the balls are firm. Transfer to an airtight container and store in the fridge.
