Nebraska Girl Fish

The waitress looked at us a little puzzled as my husband and I both ordered a burger and fries at the restaurant on the beach in Gulf Shores, AL. We could hear the waves crashing onto the beach as we sat on the deck overlooking the Gulf. We may have been visiting the coast, but neither of us were going to venture out and pay money for something we probably wouldn’t enjoy. We are Nebraska folks through and through. Seafood is not what we crave and most of the time is more of an aversion.

No matter how much I may dislike most fish, it is a food that is beneficial and even necessary for my diet. Omega-3 is an essential nutrient our body needs but cannot produce on its own. It is crucial to our brain function and health. Fish are also high in Vitamin D, which is tough the get enough of during the Nebraska winters. We can take fish oil pills and supplements, but nothing is as good as getting it from the real deal. Therefore, I sought out a version of fish I could actually eat and that fit in my budget.

Nebraska Girl Fish

INGREDIENTS

  • 5 Tilapia Fillets

  • 1 stick Butter (8 T)

  • Zest & Juice of one Lemon

  • 5 Garlic Cloves

  • 1.5 T Dried Parsley

  • 1 tsp. Smoked Paprika

  • Salt & Pepper to taste

DIRECTIONS

Preheat oven to 375 degrees.

Melt butter and add lemon juice, lemon zest, crushed garlic cloves, parsley, paprika, salt, and pepper to the butter.

Place fish on a baking sheet. I love to use my pampered chef baking stone. Pour the butter mixture over the fish and bake for 15-20 minutes or until the fish flakes apart easily with a fork. Using a basting brush, brush the liquids back over the top of fish.
